Melanzane alla Parmigiana

Ingredients

3 eggplants
4 tbsp. olive oil
2 cloves of garlic
400 g crushed tomatoes
2 tsp. sugar
4 sprigs of basil
150 g mozzarella
15 g Parmesan cheese
salt
black pepper

Preparation

  1. Cut the eggplants lengthwise into slices about 1 cm thick and sprinkle generously with salt.
  2. Wait about 30 minutes until the eggplant juices have been drawn to the surface. Dry the slices and fry in plenty of olive oil until golden brown.
  3. Finely chop the garlic cloves and sauté in olive oil.
  4. Add the crushed tomatoes and season with sugar, salt and black pepper.
  5. Leave to simmer gently for 15 minutes and then season with a few basil leaves.
  6. In a small baking dish, add a layer of fried eggplant, then tomato sauce, and then 50 grams of ripped mozzarella.
  7. Repeat for a total of three layers and top with grated Parmesan cheese and basil leaves.
  8. Bake in a 180°C oven for 30 minutes and garnish with fresh basil.
